Simple side dish for Chapathi

Preparing a semi-gravy for chapathi is not a complicated task. You can add any vegetable/lentils of your choice to the recipe below.

Cooking Time: ~20 mins
Basic Ingredients:

  1. Cumin seeds
  2. Onions - 3, big
  3. Tomatoes - 2, juicy
  4. Green chilly - 1, slit into half
  5. Chilly powder - 1 tea spoon
  6. Coriander powder - 2 tea spoons
  7. Turmeric powder - a pinch
  8. Garam masala - 1/2 tea spoon
  9. Coriander leaves

Method:

  1. Heat 2 tea spoons of oil in a pan. Add a little cumin seeds. 
  2. When the cumin seeds splutter, add the chopped onions, green chillies and sauté it. When it becomes golden brown, add ginger garlic paste and keep frying it till the onion becomes translucent.
  3. Add the chopped tomates and fry till it becomes mushy.
  4. Add the coriander powder, chilly powder, turmeric and salt to it. Mix it for 20 seconds. 
  5. Add a little water. (Based on the desired consistency)
  6. Now add the vegetable to this mixture. 
  7. Cover the pan and let it cook. Keep stirring occasionally. 
  8. Once cooked, sprinkle garam masala, chopped coriander leaves. Give it a spin and turn off the stove in 20 seconds.

  1. Brinjal
  2. Bhindi
  3. Capsicum
  4. Potato
  5. Mushroom
  6. Baby corn
  7. Channa
  8. Rajma
  9. Green gram
  10. Egg
  11. Chicken
Tweaks to the recipe:
  • When it comes to lentils, chicken, I add few spices, including, Cinnamon, Cardamom, Bay leaves, Beacon in Step 1.
  • If you want thick semi gravy, you can grind the onions and use it in Step 2 instead of the chopped onions.
  • If you want even more gravy, you can add coconut milk after step 3.
  • For chicken, I add another teaspoon of ginger garlic paste.
  • For lentils, I use a cooker instead of pan. So that the lentils get the flavour of masala. Plus, I don't have to wash two vessels ;)
