Beetroot stir fry

Serves: 2

Ingredients: 

  1. Beetroot - 1 cup, chopped into small pieces
To Temper:
  1. Mustard seeds - 1/2 teaspoon
  2. Urad dhal - 1/4 teaspoon
  3. Kadala paruppu - 1 teaspoon
  4. Dried red chillies - 2 
  5. Curry leaves - 10
To Grind:
  1. Coconut - 1/4 cup, grated
  2. Cumin seeds - 1 teaspoon
Method: 
  1. Cook the chopped beetroot and keep it aside. 
  2. Temper the ingredients listed under "To Temper" in a tea spoon of oil.
  3. Then add the cooked beetroot, ground coconut + cumin seeds mixture, salt and stir.
  4. Let it cook for 2 minutes with occasional stirring. 
This is a simple recipe and goes well with sambar/dhal rice.
