Beetroot stir fry

- Beetroot - 1 cup, chopped into small pieces
To Temper:
- Mustard seeds - 1/2 teaspoon
- Urad dhal - 1/4 teaspoon
- Kadala paruppu - 1 teaspoon
- Dried red chillies - 2
- Curry leaves - 10
To Grind:
- Coconut - 1/4 cup, grated
- Cumin seeds - 1 teaspoon
Method:
- Cook the chopped beetroot and keep it aside.
- Temper the ingredients listed under "To Temper" in a tea spoon of oil.
- Then add the cooked beetroot, ground coconut + cumin seeds mixture, salt and stir.
- Let it cook for 2 minutes with occasional stirring.
This is a simple recipe and goes well with sambar/dhal rice.
